Cauliflower Fried Rice with Shrimp

Ingredients:

  • 1 medium-sized cauliflower head
  • 2 tablespoons sesame oil or vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1/2 cup green onions, chopped
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon oyster sauce
  • 1 teaspoon ginger, grated
  • Salt and black pepper to taste
  • Sesame seeds and additional chopped green onions for garnish (optional)

Instructions:

Prepare Cauliflower Rice:

  1. Rice Cauliflower:
    • Cut the cauliflower into florets and use a food processor to pulse until it resembles rice. Alternatively, you can use a box grater to grate the cauliflower.
  2. Drain Excess Moisture:
    • Place the riced cauliflower in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.

Cook Shrimp:

  1. Cook Shrimp:
    • Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare Fried Rice:

  1. Cook Eggs:
    • In the same skillet, add the remaining tablespoon of sesame oil. Pour the beaten eggs into the skillet and scramble them until cooked. Push the eggs to the side of the skillet.
  2. Saute Vegetables:
    • Add diced carrots and peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  3. Add Aromatics:
    • Add chopped green onions and minced garlic to the vegetables. Stir-fry for an additional 1-2 minutes until fragrant.
  4. Combine with Cauliflower Rice:
    • Add the riced cauliflower to the skillet. Stir to combine all the ingredients.
  5. Season:
    • Pour soy sauce (or tamari), oyster sauce, and grated ginger over the cauliflower rice. Season with salt and black pepper to taste. Stir to evenly coat the cauliflower rice.
  6. Add Shrimp:
    • Add the cooked shrimp back to the skillet. Toss everything together until the shrimp are well incorporated.
  7. Finish and Garnish:
    • Garnish with sesame seeds and additional chopped green onions if desired.
  8. Serve:
    • Serve the Cauliflower Fried Rice with Shrimp hot, and enjoy!

Note:

  • Feel free to customize the vegetables based on your preferences. You can add bell peppers, broccoli, or other low-carb vegetables.
  • Adjust the seasoning and sauce quantities to suit your taste. If you prefer a stronger flavor, you can add more soy sauce or oyster sauce.
