- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- Fresh basil, chopped (for garnish)
Instructions:
Sauté Aromatics:
- Sauté Onion and Garlic:
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
Cook Tomatoes:
- Add Canned Tomatoes:
- Add both the whole peeled tomatoes and diced tomatoes to the pot, including the juice from the cans.
- Season with Herbs:
- Stir in dried basil, dried oregano, dried thyme, red pepper flakes (if using), salt, and black pepper. Allow the mixture to simmer for about 10-15 minutes to let the flavors meld.
Blend Soup:
- Blend Soup Mixture:
- Using an immersion blender or transferring in batches to a regular blender, blend the soup until smooth and creamy. Be cautious as the mixture will be hot.
Finish Soup:
- Add Broth and Cream:
- Return the blended soup to the pot. Stir in chicken broth or vegetable broth and heavy cream. Mix well.
- Simmer and Add Butter:
- Allow the soup to simmer for an additional 10-15 minutes. Just before serving, add unsalted butter and stir until melted.
Serve:

- Garnish the Creamy Keto Tomato Basil Soup with chopped fresh basil. Serve hot and enjoy!
Notes:
- Adjust Consistency: If you prefer a thinner soup, you can add more broth until you achieve the desired consistency.
