Keto Beef and Broccoli Stir-Fry
Ingredients:
For the Beef Marinade:
- 1 pound flank steak, thinly sliced
- 3 tablespoons soy sauce or tamari (for gluten-free)
- 2 tablespoons olive oil
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon erythritol or your preferred low-carb sweetener
- 1 tablespoon rice vinegar
For the Stir-Fry:
- 2 tablespoons olive oil (for cooking)
- 1 head broccoli, cut into florets
- 1/4 cup beef broth or water
- 2 tablespoons soy sauce or tamari
- 1 tablespoon fish sauce
- 1 tablespoon erythritol or your preferred low-carb sweetener
- Sesame seeds (for garnish)
- Green onions, sliced (for garnish)
- Cauliflower rice (for serving)
Instructions:
Marinate the Beef:
- Slice Beef:
- Thinly slice the flank steak against the grain.
- Prepare Marinade:
- In a bowl, mix together soy sauce, olive oil, sesame oil, minced garlic, grated ginger, erythritol, and rice vinegar. Add the sliced beef to the marinade, ensuring it’s well-coated. Let it marinate for at least 30 minutes in the refrigerator.
Cook the Stir-Fry:
- Heat Olive Oil:
- In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat.
- Cook Beef:
- Remove the marinated beef from the refrigerator and add it to the hot skillet. Cook quickly, stirring frequently, until the beef is browned and cooked to your liking. Remove the beef from the skillet and set it aside.
- Sauté Broccoli:
- In the same skillet, add broccoli florets. Sauté for a few minutes until the broccoli begins to soften but remains crisp.
- Add Beef Broth and Sauces:
- Pour beef broth or water into the skillet to deglaze it, scraping up any browned bits. Add soy sauce, fish sauce, and erythritol. Stir well.
- Combine Beef and Broccoli:
- Return the cooked beef to the skillet, tossing it with the broccoli and the sauce. Cook for an additional 2-3 minutes to heat everything through.
Serve:
- Garnish and Serve Hot:
- Serve the Keto Beef and Broccoli Stir-Fry over cauliflower rice. Garnish with sesame seeds and sliced green onions.
Notes:
- Low-Carb Rice Substitute: Cauliflower rice makes an excellent low-carb substitute for traditional rice.
- Vegetable Variations: Feel free to add other low-carb vegetables like bell peppers or snap peas to the stir-fry.
- Adjust Sweetness: Adjust the amount of erythritol or your chosen sweetener according to your preference for sweetness.
This Keto Beef and Broccoli Stir-Fry is a flavorful and satisfying dish that fits perfectly into a low-carb lifestyle. Enjoy the delicious combination of tender beef, crisp broccoli, and savory sauce!
