Keto Trail Mix with Nuts and Seeds
Ingredients:
- 1 cup almonds
- 1 cup walnuts
- 1/2 cup macadamia nuts
- 1/2 cup pumpkin seeds (pepitas)
- 1/2 cup sunflower seeds
- 1/4 cup unsweetened coconut flakes
- 1/4 cup dark chocolate chips (use sugar-free or at least 85% cocoa for keto)
- 1/4 cup dried unsweetened berries (such as cranberries or blueberries) – optional
- 1 tablespoon chia seeds
- 1 tablespoon flaxseeds
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1-2 tablespoons keto-friendly sweetener (optional, depending on your preference)
Instructions:
Toast Nuts and Seeds:
- Preheat Oven:
- Preheat your oven to 325°F (163°C).
- Prepare Baking Sheet:
- Line a baking sheet with parchment paper.
- Spread Nuts and Seeds:
- In a large mixing bowl, combine almonds, walnuts, macadamia nuts, pumpkin seeds, sunflower seeds, and coconut flakes. Spread the mixture evenly on the prepared baking sheet.
- Toast in Oven:
- Toast the nuts and seeds in the preheated oven for about 10-15 minutes, stirring halfway through, until they are golden and fragrant. Keep an eye on them to prevent burning.
- Cool:
- Allow the toasted nuts and seeds to cool completely on the baking sheet.
Assemble Trail Mix:
- Add Chocolate and Berries:
- Once the nuts and seeds are cool, transfer them to a large mixing bowl. Add dark chocolate chips, dried berries (if using), chia seeds, and flaxseeds.
- Season with Vanilla and Salt:
- Drizzle vanilla extract over the mixture and sprinkle with sea salt. Toss everything together to combine.
- Sweeten (Optional):
- If you prefer a sweeter trail mix, add keto-friendly sweetener to taste and toss again.
Store:
- Store in Airtight Container:
- Transfer the Keto Trail Mix to an airtight container. This can be stored at room temperature for a week or longer in the refrigerator.
