Keto Trail Mix with Nuts and Seeds

  • 1 cup almonds
  • 1 cup walnuts
  • 1/2 cup macadamia nuts
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/2 cup sunflower seeds
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup dark chocolate chips (use sugar-free or at least 85% cocoa for keto)
  • 1/4 cup dried unsweetened berries (such as cranberries or blueberries) – optional
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseeds
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons keto-friendly sweetener (optional, depending on your preference)

Toast Nuts and Seeds:

  1. Preheat Oven:
    • Preheat your oven to 325°F (163°C).
  2. Prepare Baking Sheet:
    • Line a baking sheet with parchment paper.
  3. Spread Nuts and Seeds:
    • In a large mixing bowl, combine almonds, walnuts, macadamia nuts, pumpkin seeds, sunflower seeds, and coconut flakes. Spread the mixture evenly on the prepared baking sheet.
  4. Toast in Oven:
    • Toast the nuts and seeds in the preheated oven for about 10-15 minutes, stirring halfway through, until they are golden and fragrant. Keep an eye on them to prevent burning.
  5. Cool:
    • Allow the toasted nuts and seeds to cool completely on the baking sheet.

Assemble Trail Mix:

  1. Add Chocolate and Berries:
    • Once the nuts and seeds are cool, transfer them to a large mixing bowl. Add dark chocolate chips, dried berries (if using), chia seeds, and flaxseeds.
  2. Season with Vanilla and Salt:
    • Drizzle vanilla extract over the mixture and sprinkle with sea salt. Toss everything together to combine.
  3. Sweeten (Optional):
    • If you prefer a sweeter trail mix, add keto-friendly sweetener to taste and toss again.

  1. Store in Airtight Container:
    • Transfer the Keto Trail Mix to an airtight container. This can be stored at room temperature for a week or longer in the refrigerator.

  1. Portion and Enjoy:
    • Portion out the trail mix into snack-sized servings and enjoy it as a convenient and satisfying keto-friendly snack.

  • Customize the trail mix by adding your favorite keto-friendly nuts and seeds. You can also include other low-carb snacks like pork rinds or cheese crisps.
  • Check the labels of chocolate chips and dried berries to ensure they are keto-friendly and do not contain added sugars.
  • Feel free to experiment with different flavors by adding spices such as cinnamon or a touch of nutmeg.
  • Adjust the level of sweetness to your liking by adding more or less keto-friendly sweetener.
